Best Way To Prepare Efo Elegusi.

Egusi soup which is popularly known as Efo Elegusi in Yoruba language is a delicious soup with lots of fans across the globe. A soup made from grounded melon seeds loaded with assorted meat, fish, vegetables and spices. If you are yet to taste this delicious soup , you are definitely sitting on a long thing. It’s high time you give it a trial. Preparing this meal is as simple as ABC, all you have to do is to get the necessary ingredients required for this soup and understand all the steps below.

Ingredients:

1 cup ground Egusi (melon seeds)
Assorted meat (beef, chicken, Shaki, ponmo)
Stock and Dried Fish
1 teaspoonful ground Crayfish
2 cubes of maggi
1 teaspoon of locust beans(iru)
vegetables (Spinach leaves or Ugu)
1 big sized onion bulb.
1/2 cup palm oil (2 cooking-spoonful)
4 fresh tomatoes
7 fresh chilli pepper
Salt to taste

Preparation
1: Grind the egusi seeds until it becomes very smooth. After grinding, dissolve it with a little lukewarm water to form a paste as this will reduce burning when frying the egusi.

2: Slice the vegetables , Blend the chili pepper and tomatoes and set aside.

3: Prepare assorted meat and fish with sliced onions, one cube of maggi and salt to taste.Cook until tender and set aside. Reserve the meat stock.

4.Heat up the oil in a pot and add the dissolved Egusi paste. Fry and stir continuously to avoid burning, until the soup appears thick. Then add the meat stock in (3) above and allow to boil for 10 minutes.

5.Add Crayfish, locust beans, maggi cube, blended pepper and tomatoes, cooked assorted meat & fish and cook for 10minutes.

6. Finally , add the sliced vegetable in step 2 and salt to taste.Simmer for 5 minutes and the soup is ready.

 

Note: This great soup is best enjoyed with solid food like eba, amala, pounded yam, fufu and semolina.
