How to Make Nigerian Coconut Jollof Rice

Every lover of good food will always opt for cococut jollof rice when faced with a decision to choose between coconut jollof rice and the normal jollof rice, the reason behind this simple.The presence of coconut adds something extra to the overall taste of the jollof rice. Let’s start by listing the ingredients needed for this delicious food.
Coconut Milk ( Grace , Thai kitchen or any other brand)
4 Large Tomatoes
3 Red Bell Peppers (Tatashe)
2 Green Bell Peppers
1 Medium sized Onion
1-3 Scotch Bonnet peppers (Ata-rodo)
3-4 cups rice
salt to taste
1/4 cup coconut oil
1. Put tomatoes, red bell peppers, onion, scotch bonnet peppers, green bell peppers in a blender, blend all to a smooth puree.
2. In a dry pot, heat up the coconut oil on a medium heat, add the diced onions and fry until it produces a pleasant smell
3.Add the puree in step one , add maggi, coconut milk, ground pepper, salt, crayfish and a cup of water. Cover and allow to simmer for 20 minutes
4.Open the pot and stir in rice and cover the pot.
5 Allow to cook for like 20 minutes, once the liquid in the pot is almost dried up, turn the jollof rice with a spatula or wooden spoon. Turn off the heat and leave to cool.
Now your coconut jollof rice is ready, you can serve with your choice of protein (Meat, fish e.t.c)
