How To Prepare Guinness Beef Stew

We got tired of regular Nigerian tomato stew at the Chop4naija kitchen the other day and decided to take our taste buds on a mini-tour to Ireland….The Irish Guinness Stew! It is a Mini tour as traditionally, the Irish would make this with lamb but we had to make it our own with good old beef! And no, the stew does not taste like Guinness,, the beer only makes it more flavorful and hearty!

Whipping up this meal got us all excited because cooking with alcohol has its way of making you feel like a pro chef *laughs*
No worries if you do not take alcohol, just substitute with water.

Cook Time: 2 Hours 30mins
Total Time: 3 Hours
Yield: Serves 4


• Boneless Beef (cut into 12 chunky pieces)
• 2 brown onions (chopped)
• 2 teaspoon salt
• 2 teaspoon ground black pepper
• 1 teaspoon minced garlic
• 1 teaspoon white sugar
• 2 Tablespoons groudnut oil
• 1 can of Guinness stout
• 1/2 cup tomato paste
• 6 small carrots (cut into chunky pieces)
• 1/2 cup green onions
• 2 cubes maggi
• 1 cup chicken stock


• Season beef with 1 teaspoon salt, 1 teaspoon black pepper, 1 cube maggi & vegetable oil
• Leave to marinate (about 30mins)
• Add marinated beef, onions & garlic to stew pot, stir for about 5mins on medium heat
• Pour in guinness stout & stir for another 5mins
• Add tomato paste, carrot, sugar, 1 teaspoon salt, 1 teaspoon black pepper 1 cube maggi
• Cover with chicken stock
• Cook until beef is very tender (about 2hrs)
• Remove lid of pot and allow stew to reduce till thick as desired
• Add green onions and cook for about 1min
• Serve with steamed basmati rice
