How To Prepare Tasty Ukwogho Etidot

Ukwogho etidot is also known as bitter leaves soup, it is a popular soup among the efiks. Ukwogho etidot is known to be effective remedy for diabetes and hypertension. The cooking process of Ukwogho etidot is similar to that of afang soup except that you will be using bitter leaves and water leaves instead of Afang. The bitter leaves should be washed severally to remove the bitterness, the medicinal property of Ukwogho etidot is as result of the bitter leaves being used. The following Ingredients will be needed:



7 medium pieces Beef
2 balls washed Bitter Leaves(Shredded)
4 medium size Snails (optional)
2 Maggi cubes
2 pieces stock fish
1 medium sized smoked fish
3 table spoons ground crayfish
Dry pepper ( 1 tspl)
1 Big onion (chopped)
Palm oil
4 medium bunches water leaves
1 cup periwinkle
Salt to taste

Cooking Steps

1. .Pick and wash the bitter leaves, cut them into pieces. Ensure you wash the bitter leaves thoroughly until you have drastically reduce the bitter level.Pick and wash the water leaves as well.Drain out the water in both the water leaves and bitter leaves.

2. Season and Boil the beef and the stock fish with some pepper, onion, salt and Maggi. When the meat is almost cooked, add the periwinkle and the smoked fish.

3. When it obvious that the meat is cooked, add the water leaves, ground crayfish and cook for about 5 minutes. Stir and add palm oil, cook for another 5 minutes.

4 . Finally, add the bitter leaves .You can add more water if it appears that the Soup is too thick. allow to cook for 6-8 minutes.

You can now serve with any swallow of your choice.
