Nigerian Chicken Stew Recipe

Nigerian chicken stew is a tasty stew made with chicken, peppers, tomatoes e.t.c. Sometimes it is advisable to peel off the skin of the chicken due to its high fat content.It’s a stew widely enjoyed in Nigeria and beyond. To make this great stew, you will need the following:

Fresh Tomatoes
Onions
Canned Tomato Paste
Habanero pepper
vegetable Oil
Chicken
Thyme and curry
Stock cubes
Salt to taste

Procedure

1. Pour the canned tomato paste into a bowl and dilute with water and set aside. With the aid of a blender, blend the tomatoes , peppers and onions.

2.In a pot, pour the blended tomatoes and allow it to boil until it becomes thick and the excess water has been dried.

3.In a separate pot, add the cut chicken ,add water, curry, thyme, stock cube and salt to taste. Cook the chicken, fry it and set the chicken stock aside .

4.Put a pot on a medium heat, add the vegetable oil, add onions, tomato puree and the boiled tomatoes, fry for about 20-25 minutes. Stir often to prevent burning at the bottom.

5. Add the chicken stock in step 3 above and allow it to cook for like 10 minutes. Add the fried chicken, stock cube and salt to taste.Allow to cook for 5 minutes.

At this point,  the stew should be ready.
