Nigerian Fish Stew
A well seasoned fish stew tastes very good, fish stew as the name implies is a stew cooked with fish, tomatoes, peppers and spice.It is very easy to come up with once the ingredients are available. Most Nigerians enjoy taking it as a sauce for rice or boiled yam. The following ingredients will be needed for the production of this delicious stew.
3 large Fresh fish
1kg Fresh Tomatoes
5 Habanero pepper
2 tablespoons Vegetable oil
100g Tinned tomato paste
1 Medium sized onion
Salt to taste
1. Dilute the tinned tomatoes with a little water and set aside. Blend the fresh tomatoes, peppers and onions.Pour the blended tomatoes into a pot and allow it to boil for like 10 minutes so as to dry up the excess water.
2.Cut the fresh fish, In a separate pot add the sliced fish, add a little water, Maggi cube, thyme and salt to taste. Allow it to boil for 3 minutes.
3. Heat up the vegetable oil in another pot, add the boiled tomatoes in step 1 above and the diluted tinned tomatoes in step 1 above, fry for 20 minutes. Stir constantly to avoid burning.
5.Add the fish stock obtained in Step 2 above and cook for another 10 minutes.
6.Finally, add the parboiled fish, Maggi cube (may not be necessary since the fish stock has Maggi),Salt to taste. Allow to simmer until it the fish get done.
At this point the fish stew should be ready..
