How To Cook Nigerian Ogbono Soup
Ogbono Soup is one of the most popular soups in Nigeria, often taken with swallow (Garri, Eba, fufu e.t.c).Ogbono soup derive its name from ogbono seeds, the seeds used in making ogbono soup. Similar to okra soup, it is also known as draw soup among Nigerians. Ogbono is often cooked with Egusi seeds to obtain what is called Ogbono with Eguisi soup , it can also be cooked with vegetables. To cook ogbono soup, the following ingredients will be needed.
2 handful of Ogbono seeds
3 spoonful Palm oil
Vegetables (Pumpkin or spinach leaves)
Meat and Fish
1 Medium sized onion
Salt to taste.
1: Grind the Ogbono seeds throughly using a grinder or a good blender.
2. Grind the chili pepper, slice the vegetables and set aside.
3. Wash the meat and fish, cook until tender and set aside.
4 .In a dry pot, heat up the palm oil and add diced onions
After heating for 5-8 minutes, put off the heat and add the ground ogbono into the heated oil. Allow it to dissolve by pressing the Ogbono with the back of cooking spoon and stir.
5.Put back on heat, add little meat stock obtained from boiling the meat and leave to boil for 2 minutes.At this point, you will observe that it’s gradually becoming a draw soup, add more meat stock and leave to boil for 10 minutes.
6.Add the meat and fish, seasoning cube, pepper, salt to taste.Mix all and leave to simmer for 10 minutes. Ensure that you stir the soup often to prevent burning.
7.Finally, add the sliced spinach or fluted pumpkin leaves.Simmer for 3 minutes.
At this point, your ogbono soup should be ready. This delicious soup is usually enjoyed with Swallow (Eba, fufu, semo e.t.c)
