Top Calabar Foods That Are Widely Enjoyed By Nigerians

Cross river is known for its diversity, beautiful places and amazing people. The Efiks are the people predominantly occupying the southern part of Cross river state and they speak Efik language. The Efiks have variety of foods, in fact the origin of many popular foods that are widely enjoyed by Nigerians can be traced to Efik land.Here are five popular Calabar foods that are widely enjoyed by all Nigerians

1. Afang Soup


Afang soup is native to the Efiks, people of Akwa Ibom and Cross river states of Nigeria. it is a soup that is widely enjoyed by all Nigerians. Afang Soup is a nutritious soup made with Afang leaves/Okazi leaves,water leaves and assorted meat.It a good soup for those who want to shed weight and seem to be conscious of their calories consumption, Afang leaf is dense in calories, it is said to constitute more than 15 percent of the daily required intake of 2000 calories. Afang soup is very rich in carbohydrates, 3 grams of these carbohydrates come from dietary fiber, dietary fiber promotes quick feelings of satiety and aides digestion as well.
2. Editan Soup

Editan soup is majorly consumed by the people of Akwa Ibom/ Calabar,  the major ingredient of editan soup is the editan leaves, hence the name editan soup.The leaves is very bitter, many people take their time in washing it severally before cooking it or using potash to get rid of the bitterness.Its a very delicious soup and mostly enjoyed with Swallow ( Fufu, pounded yam, eba e.t.c). Editan soup ingredients includes beaf, editan leaf, uziza leaf, snails (optional), stockfish, palm oil, crayfish , smoked fish and salt to taste.In addition, editan soup has a lot of nutritional benefits.

3. Ukwogho Etidot


Ukwogho etidot is also known as bitter leaves soup, it is a popular soup among the Efiks. Ukwogho etidot is known to be effective remedy for diabetes and hypertension. The cooking process of ukwogho etidot is similar to that of afang soup except that you will be using bitter leaves and water leaves instead of Afang. The bitter leaves should be washed severally to remove the bitterness, the medicinal property of ukwogho etidot is as result of the bitter leaves being used. To cook ukwogho etidot, you will need the following ingredient : bitterleaves, water leaves, beef, stock fish, smoked fish, snails (optional) ,crayfish, pepper and salt to taste.

4.Edikai ikong


Edikaikong soup is also a native to the efiks, Its a very nutritional food that is widely enjoyed by both the Efiks and non-Efiks. Edikaikong soup has a very high nutritional value due to the presence of dark green leafy vegetables. Dark green leafy vegetable contains small amount of Omega 3 fats which deliver big health benefits such as lowering the levels of depression, it also lowers inflammation which happens to be a key component in asthma. 5. Abak atama Soup


Atama soup is a tasty palm nut soup similar to the banga soup. This soup is native to the efiks and ibibio people of Akwa Ibom/ Cross river state.The major ingredient of this soup is the atama leaves which is grown in some states in southern parts of Nigeria. Atama Soup ingredients include stock fish, smoked fish,snails (optional), atama leaves, crayfish, pepper, maggi cubes and salt to taste.
